Preheat oven at 375 degrees.
Spray sides of an 8"x8" baking dish with cooking spray.
Add 6 tablespoons melted butter to the dish.
To a small saucepan add 4 medium peaches, cut into 1/2" thick slices, 1/8 C brown sugar, 1/8 C water. Set on medium high heat and cook for 8-10 minutes. This will soften the peaches and create a syrup in the pan.
Turn off the heat and allow to cool for 15-20 minutes.
Place these ingredients in a bowl together… 1 C all purpose flour, 3/4 C white sugar, 2 t baking powder, 1 t cinnamon. Whisk to combine.
Slowly add these wet ingredients to the dry - 1 C milk or soy milk and 1 t vanilla. Mix just till combined and add to the dish that already has the melted butter. Using a slotted spoon add the peaches to the dish making sure to evenly distribute.
Drizzle 1/8 cup of the remaining peach syrup over the top of the mixture.
In a small bowl. combine 1/8 C all purpose flour and 1/8 C brown sugar. Sprinkle on top of the mixture.
Bake at 375 degrees for 45-55 minutes. Test with a toothpick. When it is mostly dry it is done baking.
Let cool 10-15 minutes. Serve warm or cold.
